Overnight Cinnamon Oatmeal Pancakes

Don't like a bowl of oatmeal for breakfast? Want something a little different from your typical bowl of oatmeal? Check this recipe out!

Now this recipe isn't exactly mine. I know I made some changes to it but I have had it from the beginning of my journey.. 4 years-ish now.. during my time where I tried to find a good gluten free pancake recipe. I don't own the recipe and would love to give recognition to the one who originally posted the recipe but I can't seem to find her blog any longer.

Overnight Cinnamon Oatmeal Pancake Recipe:
Ingredients:
2 Cups Gluten Free Oats (Quick or rolled both work)
1/2 Cup Brown Rice Flour
1/4 Cup Tapioca Starch OR Arrowroot Starch
1 tsp Baking Soda
1 tsp Baking Powder
Pinch Himilayan Salt
1 Tbsp Ground Cinnamon
1/4 tsp Ground Nutmeg
1/4 cup Raw, unpasteurized local honey
2 Large Eggs
2 tsp Homemade Vanilla Extract
2 tsp Unpasteurized Apple Cider Vinegar
2 1/2 Cup Dairy Free Milk (I prefer coconut milk but almond milk works and organic grassfed cow milk does work too)
Optional: dark chocolate chips(my kids favourite), chopped apple(my ultimate favourite), blueberries(my second favourite), any berries(my favourite lol), etc.
I mix all the dry ingredients together first then I add the wet ingredients and combine everything together. Put a cover over top and let sit in the fridge overnight! Easy peasy! Next - heat a frying pan up with a little coconut oil or butter. I use a 1/4 cup measuring cup to measure out the batter. Flip them once the top becomes bubbly!
