Better Than Two Bite Brownies

Ooey-gooey and fudgey brownies made healthier and gluten free with no refined sugars. Easily adaptable to dairy free. Much more delicious than the store bought two bite brownies!


Sugar is sugar of course but why did I choose the muscovado whole sugar that I used?











Because it contains a lot more nutrients than refined sugar of course!


An incredible natural source of iron, zinc, and magnesium. Refined sugar does not contain any nutrients so for treats this unrefined sugar makes me feel like I am still feeding my children more nutrients than if I were to use refined sugars.













I also chose to use cacao powder instead of cocoa powder. What is the difference between cacao powder and cocoa powder? It is how they are processed! Like refined vs unrefined sugars - cacao powder is less processed containing more nutrients. Check out the nutritional facts for instance on the bag:







Ingredients:

6 tbsp butter, ghee or coconut oil

2/3 cup muscovado whole sugar

7 ounces Enjoy Life dark chocolate chips or semi-sweet chocolate chips

2 Large Eggs, room temperature

1 tsp vanilla extract(optional)

2 Tbsp cacao powder

3 Tbsp arrowroot flour or non-GMO cornstarch

Pinch of himilayan salt


Set oven to 350 degrees to preheat.

I started with putting butter/ghee/or coconut oil, muscovado sugar and chocolate chips into a large glass bowl.





I create a make shift double broiler using a medium size pot with a couple inches of water on the bottom and placing the glass bowl on top like this.

I turn this onto medium heat and let the ingredients melt until it is well combined. Take the glass bowl off of the pot (carefully as the bowl does get quite hot) and set it aside to cool down a little for about 5-10 minutes. Next, quickly whisk in 1 egg at a time combining well between each egg. You can add vanilla if you like at this time as well and I throw my pinch of himilayan salt in at this time. Once the eggs are combined well next whisk in the cacao powder and arrowroot flour(or cornstarch). Whisk really well until it turns nice and shiny!


I like to make mini brownie bites in my mini muffin pan. It's approximately 1 tbsp of batter per muffin. It makes approximately 24 mini muffins.


Then bake in your preheated oven for approximately 20 minutes. I have an old oven so this may take less time in your oven. Just keep an eye on it! You will know these are cooked to perfection when you see a nice shiny coat on the top of them.
