Christmas Crack

This recipe is by no means "healthy" but I love a good treat around Christmas time. I couldn't find a good gluten free version of this recipe so I threw one together. It turned out amazing!

Christmas Crack Recipe:
Ingredients:
3 packs (18 whole crackers = 36 crackers) Gluten Free Schar Saltine Crackers
1 cup Muscovado sugar
1 cup salted butter OR salted lactose free butter
Pinch himilayan salt
1 tsp homemade vanilla extract
2 cups Enjoy Life dark chocolate chips
Preheat oven to 400 degrees. Lay parchment paper on a cookie sheet. Place the crackers in one layer to cover the bottom of the cookie sheet.
In a pot, put the butter and muscovado sugar and melt together on medium low heat stirring until it comes to a boil. Add the vanilla extract. Remove from heat at this time and spread over top of the crackers. Like this:

Put it into the oven for 5 minutes until it starts bubbling.
Melt the chocolate in a double broiler, like this picture I have posted in past blogs:

After the cracker/caramel mix is done bubbling in the oven, remove from the oven and set aside until it hardens a little. Spread the chocolate over top! Throw it in the fridge or freezer until it hardens and you can break it up.
