Sweet Potato Chicken Poppers

These are delicious! We love these served with a clean BBQ sauce and raw veggies and dip on the side. Kid friendly, Paleo, Whole 30, and AIP friendly.


I made a double batch this weekend. One for supper this week and one for the freezer for the kids lunches or snacks. This is super easy to make. We used ground turkey today but ground chicken is great too.

Sweet Potato Chicken Popper Recipe:

Ingredients:

1 lbs Local, pasture raised ground Turkey or Chicken

2 Cups Uncooked, grated Sweet Potato

2 Tbsp Coconut oil or Avocado oil

2 Tbsp Coconut Flour

1 Clove Garlic, Minced

1 Tbsp Onion, Minced

1 tsp Garlic Powder

1/2 tsp Onion Powder

1/2 tsp Paprika (Omit for AIP)

1/2 tsp Chili Powder (Omit for AIP)

Himilayan Salt, to taste


I literally throw everything into a bowl and mix it altogether. I use a tablespoon to roll into meatballs OR I make little mini sliders. Throw them onto a cookie sheet, throw them into the oven for about 15-20 minutes at 350 degrees and VOILA! Ready to eat.
