Sweet Potato Avocado Brownie Bites

I make these every year for school snacks and they freeze great. I love baking different recipes using fruits and vegetables. Do you taste the sweet potato or the avocados? Nope! Not at all. It does make them nice and moist though.

Sweet Potato Avocado Brownie Bite Recipe:
Ingredients:
1/2 Cup Sweet Potato, mashed/pureed
1 Small Avocado
2 Large Eggs
1/4 Cup Raw, Unpasteurized Local Honey
2 Tbsp Coconut oil OR EVOO OR Avocado Oil
3 Tbsp Coconut Flour
1/3 Cup Raw, Cacao Powder
1 1/2 tsp Baking Soda
Pinch Himilayan Salt
1/3 Cup Enjoy Life Chocolate Chips
In my vitamix, I throw in all the ingredients from beginning to end EXCEPT for the chocolate chips. Turn it on high and blend really well. Throw the batter into a bowl and mix in the chocolate chips. Put the batter into mini muffin tins. Bake on 350 degrees for 15-20 minutes. A toothpick should come out clean! Let cool in the pan for 5-10 minutes before removing. These freeze great!
