Healthy Crunch Bars

Another versatile recipe for you guys. Vegan, gluten free. Could easily be grain free! Packed full of good nutrients - magnesium, iron, fibre, manganese, Omega 3 (if you opt for seeds), selenium, calcium, etc. I seriously forgot how delicious these were!



I know any recipe is good when it becomes Tucker approved


Healthy Crunch Bars Recipe(Grain Version):

Ingredients:

1 cup One Degree Sprouted Brown Rice Crispies

1/4 cup Let's Do... Organic Unsweetened Shredded Coconut

1-2 Tbsp Seeds (chia seeds or hemp hearts are my favourite)

1/2 cup Raw Cacao Powder

Pinch Himilayan Salt

1 tsp Homemade Vanilla Extract

1/4 cup Good Quality, Local Maple Syrup

1/2 cup Organic Unrefined Coconut Oil



Healthy Crunch Bars Recipe (Grain Free Version):

Ingredients:

1 cup Let's Do... Organic Unsweetened Shredded Coconut

1/4 cup Seeds (Chia seeds, hemp hearts, etc)

1/2 cup Raw Cacao Powder

Pinch Himilayan Salt

1 tsp Homemade Vanilla Extract

1/4 cup Good Quality, Local Maple Syrup

1/2 cup Organic Unrefined Coconut Oil


Mix together all the dry ingredients in a large bowl. In a pot, throw in the maple syrup and coconut oil. Turn your stove on very low and let the coconut oil melt. Add the vanilla. Throw it altogether with the dry ingredients. Now you can spread it on a cookie sheet with parchment paper and break up into smaller pieces or I put them in mini muffin cups today. There are various ways you can do this. :) You can add any extra ingredients you would like!


These are fridge or freezer friendly. I'll freeze them for the kids school snacks or if we will eat them within the week then just the fridge is fine.
