Flourless Chocolate Cake

A rich, soft, gooey delicious brownie. <3


Flourless Chocolate Cake Recipe:

Ingredients:

4 Ounces (2/3 cup) Enjoy Life Dark Chocolate Chips OR Enjoy Life Semi Sweet Chocolate

1/2 Cup Butter OR Coconut Oil OR Dairy Free Butter

3/4 Cup Muscovado Sugar

OR

1/2 Cup Raw Honey or Maple Syrup (NOT both!)

1/2 cup Raw Cacao Powder

3 Large Local Pasture Raised Eggs, beaten

1 tsp Homemade Vanilla Extract (optional)







Throw together a double broiler - if you forget what I mean, it's like this >>>>>










Preheat your oven at 300 Degrees. Grease a round 8" pan and dust with cacao powder. I also put a piece of parchment paper on the bottom of the pan so it didn't stick.

In the double broiler, put in the chocolate and butter. You can add the sugar or sweetener at this point too if you like. I prefer to put the sugar in at this point as muscovado sugar can be course and I like to 'melt' it a bit. If I use honey or maple syrup, I prefer to wait.


After your chocolate/butter mix is melted, Stir in the sweetener IF you haven't already and mix in the cacao powder. One at a time, quickly stir in the eggs. Mix well. You can add the vanilla at this point - or not! It's optional.


Pour the batter into the pan. Bake 30-35 minutes. Cool in the pan for 10 minutes before removing. You will know it is cooked if you wiggle the pan and it doesn't have much give to the cake. It will be moist in the center but shouldn't be too moist. Toothpick will come out fairly clean but a little moisture on it. I hope you understand what I mean by this :)
