Dark Chocolate Chip Banana Muffins

Moist and delicious, naturally sweetened, dairy free and always gluten free!

These muffins = my kids favourite snack! These are naturally sweetened with raw, unpasteurized honey and free of dairy. I have tried to make them using an egg replacement (Chia egg and an egg substitute) neither of which worked out very well for me! As always - let me know if you make it free of eggs and how you did it. I'm always open to new ideas.

Dark Chocolate Chip Banana Muffin Recipe:
Ingredients:
1/3 cup avocado oil or coconut oil(melted)
1/3 cup raw unpasteurized honey or maple syrup
1 large egg
2 medium sized bananas
1 tsp vanilla extract (optional)
1 1/4 cup Bob's Red Mills Gluten Free 1 to 1 Baking Flour
1/4 tsp ground cinnamon (I also add a little nutmeg or cardamom from time to time)
1 tsp Baking powder
1/2 tsp Baking soda
1/4 cup Enjoy Life Dark Chocolate Chips
Preheat your oven to 350 degrees.
In my Vitamix blender (or any blender), I put in all of the ingredients from top to bottom (wet to dry ingredients) EXCEPT for the chocolate chips. Turn the blender on until everything is blended well.

Pour it into a bowl and stir in the chocolate chips!

Next, get your muffin tin ready. I use silicone muffin liners personally. Pour approximately 1 heaping tbsp into the muffin cups. Throw the tray into the oven and bake approximately 20-22 minutes. A toothpick will come out clean if inserted. Don't over bake though because they can become dry.
Let rest about 10-15 minutes after you take it out This makes 12 muffins.
