Chili (Whole30/Paleo/Hidden Veggie friendly)

Double batch of Hidden Veggie Beanless Chili in the Instant Pot using Grass fed ground beef from SFL

Today for my quick meal prep, I made hidden veggie beanless chili! My recipe is always made flexible and depending on how much time I have, I will use my instant pot or make it on the stove. I will add more veggies or maybe even less... depending what I have in my fridge! Often times I will make the veggies 'hidden' too by blending them.













Feel free to make this more spicy with cayenne or more cumin or chili powder. I made this my children friendly which means it must be mild! Us adults can add more spice if we want it hotter. You could add beans to it if you so please. Add more veggies or chop your veggies instead of hide them! It's versatile!


This is great for supper or meal prepping for lunches. My kids love this for school lunches too!


Chili Recipes:

Ingredients:

1 Pound Local, Grass Fed Beef

1 Can Navy or Kidney beans OR 1/2 cup Navy or Kidney Beans, soaked, sprouted and cooked

1 28 ounce jar/can Dice Tomatoes OR Tomato Sauce

1/4 or more Bell pepper of whatever colour

1 stalk celery

1/2 - 3/4 medium sized onion

2-3 cloves garlic

Any extra veggies: Carrots, sweet potato, spinach or other dark greens, etc.

1/2 tsp garlic powder

1/4 tsp oregano

Salt and Pepper, to taste

1 1/2 Tbsp Chili Powder

1 tsp Cumin


For Instant Pot: Turn settings onto Saute. Cook up the ground beef while you chop or throw veggies and tomato sauce/diced tomatoes into the vitamix or blender. Once the ground beef is cooked, throw in the tomato sauce and veggies(chopped or blended). Add all the spices you want! Turn on the Chili setting and set for 15 minutes. Let it cook and when it beeps - voila! It's done. Easy peasy!


For the stove top: Cook the ground beef while chopping or blending veggies. Once the ground beef is cooked, throw in the tomatoes and veggies(chopped or blended) and add all the spices you want! Let it simmer for 1-2 hours. Takes a little longer so if I have less time the instant pot is definitely much quicker but I do enjoy making it stove top from time to time if I have more time.


Serve it with a dollop of sour cream and cheese sprinkled on top if you eat dairy, rolls if you eat grains, or alone if you prefer! My favourite way to eat this too is served over top of homemade sweet potato fries with a little cheese on top! YUM!!! My kids also enjoy it served with some brown rice pasta too.
