Butter Chicken (Or chickpeas!)

This dish is super versatile. You must all know I love versatile dishes by now. :) Gluten free, grain free, dairy free (optional), nut free, paleo and keto AND guess what?! Super easy to make vegan or vegetarian too! Yum!

Top it with some cilantro for decoration. Use chickpeas, beans or lentils instead of chicken. The cayenne pepper is really going to be up to your taste - make it spicy or mild! Cook this in the instant pot OR just on the stove.


Butter Chicken (or Chickpea) Recipe:

Ingredients:

2 lbs Pasture Raised Boneless Skinless Chicken Breast, diced up

OR

1 Cup dried garbanzo beans, soaked overnight and then cooked

1/2 Cup Butter, Ghee, or Avocado oil (for dairy free)

1 Medium Onion, diced up 5 Cloves Garlic, minced

1 Fresh Tomato - Optional, sliced up

2 Tsp Garam Masala

1/4 Tsp Cayenne (making it very mild and adults add our own extra afterwards)

2 Tsp Curry Powder

1 Tsp Ground Cumin

1 Tsp Ground Ginger

Himilayan Salt, to taste

1-400mL Can Cha's Organic Coconut Milk (or brand of choice)

1-6 ounce Tomato Paste


I usually start by organizing everything. Measure out all the spices in one dish, slice up all my onion, garlic and tomato. Dice up my chicken or prep my chickpeas, beans or lentils.


I start by putting the oil or butter in my instant pot on the sautee setting or regular pot on the stove is fine. Throw in the diced onion and garlic. Cook it until it is about to start browning and add in the spices. Let them cook for a minute while continuing to stir!


At this time, I'll throw in the diced chicken or chickpeas, pour in my coconut milk and tomato paste. Mix well! Throw my instant pot on the meat/stew setting for 12 minutes and voila!


OR for stovetop, do the above, add your chicken or chickpeas, beans or lentils, throw a lid on it and simmer until the chicken is cooked well!


Throw some fresh cilantro on top and maybe some more cayenne if you want to add a little more heat to it. Serve this with cauli-rice (Riced cauliflower) for a paleo, grain free, or keto approach or basmati rice for a gluten free version!
